Easiest Berry Preserve Recipe

2020 has pretty much made us all survivalists in some way, shape, or form. Whether it’s been learning how to grow your own foods, or learning how to cook, these past few months have put a lot in perspective, and I like to think I’ve been taking advantage of the opportunities. My husband and I have recently become vegans, so we’re spending a lot more time in the kitchen, and flipping through recipes. We’re both big on easy breakfast options like avocado toast, oatmeal bars or muffins, and he particularly likes toast and fruit spread with a cup of tea. So I learned how to make preserve, and let me tell you—it's truly the easiest thing ever. You should never even purchase preserve/jam/jelly again, because it’s desperately easy to do at home. And even if you aren’t a preserve person, but you’ve got some fruit in your fridge that’s soon to go bad, making preserve is the best way to get more use out of that fruit! So without further adieu, here’s the recipe.

Belinda’s Berry Medley Preserve

Ingredients

2 cups strawberries

2 cups blueberries

1 cup blackberries

3-4 Tbsp agave (depending on desired sweetness)

4 Tbsp chia seeds

Instructions

Add all of the berries and agave to a medium-large saucepan set over medium heat. Heat until the berries begin to release their juices, which ranges from 5-15 depending on if you used fresh or frozen fruit.

Bring the fruit to a gentle boil, stirring occasionally, until the berries begin to reduce. Around the 10 minute mark, begin to mash the berries with a potato masher or spoon.

Reduce the heat to medium-low and stir in the chia seeds. Continue to cook for another 5 mins.

Remove the saucepan from heat, and pour the preserve into a mason jar to sit and cool.

The longer the preserve sits, the more it’ll thicken.
